清境農場海拔介於1600~2100公尺之間,景緻清幽,氣候宜人,素有「霧上桃源」之美譽。早期行政院退除役官兵輔導委員會為了安置投效疆場的滇緬邊區游擊隊、眷屬及國軍退除役官兵,在清境從事農墾開發,開始設立現今的清境農場。所以在清境地區的雲南人當然也將家鄉味繼續發揚,這就是清境以雲南擺夷料理聞名於全台的緣由了。

   清境農場的雲南擺夷料理最大特色就是酸、辣,且運用大量的如山椒、花椒等香料,結合高麗菜、豬頭皮、黃魚、吳郭魚等等各種食材,經過油爆、烤香之繁複程序,將辣椒的特性運用到極至,做成一道道膾炙人口的雲南料理,美食當前,如錦灑、雲南大薄片、包料魚、酸辣魚、豌豆粉、檸檬魚、乳扇、竹蟲、炸牛皮等等經典雲南擺夷料理,都讓人吃了還想再吃,獨特的風味,不得不令人陶醉於其特殊的料理。

其中以「包料魚」與「竹蟲」兩道料理最特別
    雲南擺夷料理中最特別的是竹蟲與包料魚兩道料理,竹節蟲來自滇湎,是一種生長於竹子中的幼蟲,它們吸取竹汁維生,營養價值頗高,經油炸後加上調味料、辣椒,口感香辣酥脆非常好吃。另一道擺夷包料魚也是絕佳的味蕾饗宴,作法是先是以香料塞入吳郭魚腹,再用細繩綁好後放入油鍋慢煎,煎炸好的包料魚皮香酥脆、餡料香辣,也是許多喜愛美食的遊客到清境農場遊玩時用餐必點的一道佳餚。下回到清境農場遊玩時,要記得嘗嘗雲南擺夷料理喔。
